chocolate covered coconut macaroon

My first chocolate recipe of the FallingInChocolate blog 🙂 yaay !
I absolutely love coconut so i decided to make macaroons ( no not the colorful macaron). where i come from they call them ‘rotsjes’in english that means ‘little rocks’ because they look like rocks :p

The recipe is really easy and it’s done in minutes.

2 egg whites
100 grams of sugar (caster or icing)
100 grams of shredded coconut
1 tablespoon of self raising flour.

Whisk egg whites until semi stiff, add sugar and continue whisking until you have an airy and smooth result. Add the flour and coconut to the egg white and mix very gently, so you don’t beat the air out. 

Preheat the oven at 160°C or 320 fahrenheit.
Take a baking tray and line it with baking paper, place little ( or big ones like i did) heaps of mixture on the baking tray. Make sure they are spread apart a bit because they tend to flow out a bit. Bake for about 30 min, or until they start to get golden. If you want to bake them lower you need to turn the oven lower. So they get hard on the outside and still soft on the inside. Now they are ready 🙂

for the chocolate covering : melt 50 grams of chocolate pearls ‘au-bain-marie’ or in the microwave. When completely melted take out of the water/microwave and stir in another 50grams of cold/unmelted chocolate pearls. This will make the chocolate shiny. Then dip in the macaroons until they are half covered, then take them out and shake of the excess chocolate. Place on a tray to dry. When the chocolate is dry and hard you can finally enjoy these little pieces of heaven.
